Potato salad doesn’t sound much like a Japanese food right? But it is! It is similar to American potato salad but the difference is in the mayonnaise. Japanese mayonnaise is more tangy-- it has more flavour and the taste is sharper, and stronger than the normal mayonnaise you can find in the grocery. Japanese Potato Salad has more vegetables in it as well, which makes it healthier and tastier. Makes a whole meal in one dish by adding ham and boiled eggs in it. I never heard of this dish until we had lunch in a Japanese restaurant in Subiaco. Potato salad in a Japanese restaurant? I got curious. I have always loved eating the American Potato salad which was the only potato salad I ever knew. We tried it, and we were so impressed with how the different ingredients blended and gave a very unique flavour to our palette. I tried making it at home and the taste is even better, especially when eaten with Karaage (Japanese Fried Chicken).  Nothing can beat home cooked meals! Try it and you’ll see how Japanese flavours can turn a simple, famous dish into a one of a kind dish with a totally different, yet great taste!

Ingredients
  • 1 kilo potato mashed
  • ½ cup corn kernel
  • 1 medium carrot diced
  • ½ cup cucumber diced
  • ¾ cup kewpie Japanese mayonnaise
  • 2 hard boiled eggs diced
  • 1 tsp rice vinegar
  • ¼ tsp white sugar
  • ½ tsp salt
  • ½ tsp pepper
Instructions
  1. Peel the potatoes and slice to medium size cubes, then boil until soft.
  2. Mash the potatoes roughly. We want the mixture to retain lumps.
  3. Mix all the other ingredients
  4. Chill before serving.
  5. Enjoy eating!
