Every time we eat in a Japanese restaurant; I always order Salmon Teriyaki with Sushi Rice. This combo is so perfect! I just love how well the teriyaki sauce complements the salmon. I never get tired eating this same dish over and over again. It’s healthy and so yummy! I tried so many recipes for this dish, but nothing can really compare with what I usually order in my favourite Japanese restaurant. I tried making my own mixture of the sauce, and tried several times to get the taste I wanted and finally after a few trials, got the perfect taste-- even better than what I get from the restaurant! This dish is a perfect quick weeknight supper. Just pop in the oven for a few minutes and you are done... after marinating of course. This can also be a special meal you can prepare for your friends and guests coming over your house. I hope you enjoy this recipe as much as I did.

Ingredients
- 500 grams salmon
- 60 ml mirin
- 50 grams light brown sugar
- 60 ml light soy sauce
- 2 tbsps rice vinegar
Instructions

Mix all the mirin, light soy sauce, rice vinegar and sugar in a bowl. Mix well until sugar dissolves.

Put in the salmon slices. Let it stay in the fridge for at least an hour to marinade. I prefer to marinade overnight to infuse the flavours in the fish.

Heat up your oven 180˚C for 10 minutes then bake fish for 10-15 minutes. Depends on oven and thickness of the fish. Check with fork if already cooked inside. Remember salmon tastes better if not over cooked. If you perfectly get the right timing of cooking, this will be your best experience of eating salmon.
